We study authentic Italian cuisine, and devise a new menu based on what we learn there. In addition, once a year, we also started practical training at local restaurant in Italy for about one month.

Started in 2015 for making our restaurants attractive. An employee with a sommelier qualification is a lecturer, and a study session is held once a week, and there are successful candidates among the participants in the study session every year.

In addition, we are actively working on technology improvement, such as a cooking contest sponsored by the Italian Chamber of Commerce and Industry or a food company. If you win the in-house contest, your menu will be provided at all restaurants for 3 months, and you can get a bonus, hundreds of thousands of yen, for each meal.

イタリア研修に、ソムリエ取得勉強会…。「本格」を追求できるレストラン。

例えば、成長意欲の高い社員を対象としたイタリア研修。イタリア本場の料理を研究し、そこで得た学びをもとに新メニューを考案します。他にも年1回、1ヶ月程度、イタリア現地レストランでの実務研修も始めました。

次に、ソムリエ取得勉強会。お店の魅力を高めようと、2015年よりスタート。ソムリエ資格を持つ社員が講師となり、週1回、みんなで勉強会を行なっており、勉強会の参加者から毎年ソムリエ合格者が出ています。

他にも、イタリア商工会議所や食材メーカー、当社主催の調理コンテストなど、技術向上の為に積極的に活動しています。社内コンテストで優勝すれば、自分のメニューが3ヶ月間全店で提供され、1食ごとにインセンティブを支給。数十万円を手にできることもあります。
